The first test roast of this little beauty from the little village of Aricha really blew us away. A reminder of how much potential for fruity flavour there is in these tiny beans.
800 farmers from the area surrounding the village, dotted across the hillsides from 1,900 to 2,100 m.a.s.l, have come together to showcase the unique complexities driven by this high-altitude region's wonderful microclimates.
Following harvest, and once the cherries have been hand-sorted and floated to remove any imperfect fruit, they are depulped and fermented for 100 hours, before being dried on raised beds for 15 days.
After a roast on the lighter end of the scale, tasting the result on a cold October morning immediately transported us back to warmer days, a burst of summer, filled with fresh stone fruit and hedgerow foraging.
