Over the last decade, as we've all become more used to the amazing variety of flavour that these amazing little coffee cherries can create, so coffee farmers have grown in confidence to truly push the boundaries of what is possible. Developing ever more experimental processing techniques to extract and enhance each and every cup.
Right at the forefront of experimentation you'll find Jairo Arcila. Father to the brothers who established our importing partner 'Cofinet', Jairo's co-ferments have been mind-scrambling highlights of many a recent cupping session.
Here, before any of the fruit is removed, the very ripest of Castillo coffee cherries are combined with fresh Cherries in sealed tanks to undergo anaerobic fermentation. The Cherries add a delicate sweetness that almost fizzes on the tongue, creating a coffee full of bright acidity. This isn't simply a cherry oil added last minute, but the true combination of the flavours of these two wonderful fruits. It's still coffee, just something different.
