PAOLA TRUJILLO - WASHED ANAEROBIC COLOMBIA

When we first tried this washed anaerobic processed number from Paola Trujillo and her team at Patio Bonito farm in Cauca, Colombia, as the coffee cooled we were all hit with an incredibly nostalgic flavours of those citrus-y chewy fruit sweets (think Fruit-tella or Starburst). The sort of intense sweetness you get with sweet roasted stone fruits.

Paola is a young coffee farmer, who brings her knowledge of chemical engineering to the family farm where they grow a wide range of varieties that are meticulously processed and cupped along the way. Her approach is considered, full of energy, passion and really inspiring.

On the farm, once the coffee cherries have been sorted, they undergo a 22-hour anaerobic fermentation, a process that highlights these amazing zingy notes, enhances the sweetness and results in a crispy and lively character.

After this initial fermentation, the cherries have all the pulp and mucilage washed off before another 18 hours of fermentation, eventually drying out raised beds.
