TIDAL - AQUIARES, ENTRE RIOS - COSTA RICA

For coffee drinkers who love to follow the seasons. 

When developing our house coffee at Soulshine, we wanted to offer a house espresso that like the food offering changes with the seasons. Tidal is our answer, changing with the tides, always from a single origin, always from the freshest crops, and always with bags of character. With or without milk whether made on a fancy espresso machine, Aeropress, filter or just a simple cafetiére at home its got you covered. We love the rhythm of getting to know a coffee over a few months then moving onto the next one as the season changes. 

Autumn 2026 - Drumroll.....Aquiares coffees are back!! 

Aquiares, one of Costa Rica’s largest and most historic coffee farms, sits high on the fertile slopes of Turrialba Volcano and is a beacon of sustainable agriculture, community, education and longevity. Led by the Robelo family who manage every step of the coffee production, growing, harvesting, milling but so much more than that. They understood long ago that investing in the community, looking after and protecting the land and educating themselves and others along the way is the basis for truly sustainable farming. We've got a few coffees from them to release over the coming weeks but first up is the Washed Process Entre Rios. A mix between two varieties Obata and Marsellesa. Both of which are hybrids of the same parent plants and offer disease resistance and are deliciousness in the cup. When roasting we go at a good pace to a medium roast level with slightly shorter development time to enhance the light honey sweetness and toasted almond flavours. It's a delight in a flat white and a pleasure across all brew methods.
