Our Tidal Espresso is named as it changes like the tides, with the seasons. First up this summer we selected a sweet, bright Pache variety from Finca El Retiro De Quisaya in the Chimaltenango region of Guatemala. Coffee cherries are carefully handpicked then delivered to the mill on the farm to be processed. Here they are sorted, pulped to remove the external fruit of the cherry and then fermented in aerobic tanks for 14 hours. The coffee is then washed, the mucilage is removed mechanically and then dried on patios for ten days.
We think of this coffee as a great breakfast coffee and have really been enjoying it served up in a flat white!
